Favorite weekday stir fry

Here’s another recipe for a weekday staple in our household. yes, do you understand? I said recipe. *shock*

as you probably know. Now I don’t often follow recipes. Rather, I take inspiration from them and create a lot of my own riffs. But this is the one recipe I follow exactly (well, almost ?) every time and it comes out perfect every time: NYT Cookings Stir-fried Turmeric Black Pepper Chicken.

Slightly sweet, very savory, with the perfect amount of pepperiness – and turmeric and vinegar combined, you can’t put your finger on why this is so good, but it is.

even better? It’s super easy (you’re using chicken thighs, so you don’t overcook the chicken!), quick, and probably best of all – I usually have all the ingredients on hand. I always keep chicken thighs in the freezer and usually buy asparagus from the store once a week to use in some recipe.BONUS: Asparagus will last a while in the vegetable drawer! produce bag!)

Serving Tips + Easy Changes:

  • Don’t skip adding the vinegar at the end. It really makes the whole dish! (If you don’t have rice vinegar, you can use vinegar as well!)
  • I usually serve it with crunchy rice, but it’s also delicious with yakisoba!
  • No asparagus? You can use fresh or frozen green beans (TJ’s frozen green beans are the best!) Sliced ​​celery would also be delicious. It sounds strange, but try it.
  • I like to add sliced ​​onions (any color) and shallots if you have them!
  • For those who like spiciness, add a little chili paste, pepper flakes, or chili crisps.
  • I never actually squeezed lime over the top, as the recipe suggests for finishing. Don’t worry if you don’t have limes.
